1 whole chicken, giblets and neck removed<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

1 tablespoon brown sugar<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

2 tablespoons Caribbean Jerk Seasoning spice mix<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

3 fresh limes<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

8 sprigs cilantro<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

1 (20-ounce) can chunk pineapple, drained, reserving \u00bd cup of liquid<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

3 sweet potatoes, cut i<\/span><\/span>n<\/span><\/span>to 2<\/span><\/span>-inch\u00a0<\/span><\/span>chunks<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

\u00bc\u00a0<\/span><\/span>cup<\/span><\/span>\u00a0dark rum (or chicken stock)<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

1 cup chicken stock<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

2 tablespoons chopped cilantro<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

\u00a0<\/span><\/p>\n<\/div>\n

\n

\n

PREPARATION<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

1. Preheat oven to 350 F.<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

\n

2. In small bowl, combine brown sugar and\u00a0<\/span><\/span>spice mix<\/span><\/span>.\u00a0 Rub mixture all over outside of chicken.\u00a0\u00a0<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

\n

3. Cut one lime into quarters and insert into chicken cavity.\u00a0 Add cilantro sprigs to chicken cavity.\u00a0 Place chicken in roasting pan and surround with pineapple chunks.\u00a0 Place in oven and roast for 45 minutes.<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

4. While chicken is roasting, juice\u00a0<\/span><\/span>the\u00a0<\/span><\/span>two remaining limes.\u00a0\u00a0<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

5.\u00a0<\/span><\/span>Remove chicken from oven, add sweet potatoes, rum, chicken stock<\/span><\/span>,<\/span><\/span>\u00a0and lime juice to pan.\u00a0\u00a0<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

6.\u00a0<\/span><\/span>Return to oven and roast for another 45 minutes to one hour, or until internal temperature in thickest part of the thigh reaches 180 F.<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

7<\/span><\/span>. Remove chicken from oven and place on sheet pan.\u00a0 Tent with foil to keep warm.\u00a0\u00a0<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

8.\u00a0<\/span><\/span>Remove pineapple and sweet potatoes from pan and reserve.\u00a0\u00a0<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

\n

9.\u00a0<\/span><\/span>Pour sauce in pan into serving dish; add chopped cilantro.<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n

10<\/span><\/span>. To serve, carve chicken or place whole chicken on platter.\u00a0 Surround with sweet potato\/pineapple mixture and pass with sauce.<\/span><\/span>\u00a0<\/span><\/p>\n<\/div>\n
