‘Coco’s’ coming soon to Fairlea, will serve ‘feel good food’

Abby Bashlor is opening a new eatery inside Nova Jiu Jitsu, located near Tractor Supply in Fairlea inside the former Sears building.
“This is a place you can eat after a good workout and go home feeling good,” Abby shares. “Everything will be made in house or bought locally.”
She’s calling it “Coco’s”, in honor of her miniature schnauzer. “She’s been with me through all the things in life, so it just made sense.”
Coco’s will offer breakfast, lunch, and dinner five days a week. Hours and a detailed menu will be released soon. Expect an opening announcement this winter.
The Food



While the menu isn’t available quite yet, Abby says folks can expect a fresh, tasty selection with ingredient transparency.
“My goal is to provide transparency in ingredients,” she says. “You will know every ingredient. It won’t be some weird thing you don’t know what it is.”
Breakfast items will include burritos (using homemade tortillas), egg bakes, sandwiches, quiches, and muffins.
Lunch and dinner items will include sandwiches, soups, specials, and baked goods.
Plus, a smoothie station will include fresh fruits and add-ons such as protein and collagen.

“We will have grab and go stuff like frozen burritos and fresh made items,” she adds, aiming to provide folks with multiple options for enjoying a fresh meal on a busy day.
“We will have lots of treats,” Abby promises. “Cookies, muffins, cupcakes, danishes, brownies, and more. Real cookies with butter, flour, and sugar! Using real ingredients is healthy.”
When Abby says everything will be made in house, she means everything. Down to the bread and the sauces for sandwiches.
“Chad from Flavor Mutt always says it’s all about collaboration,” she says. “And I love that.”
So Coco’s will include a market of local goods such as meat from Renick Valley Meats, raw milk from a Monroe County farm, local greens, and more.
“We hope people can stop by right here in Fairlea and get fresh meat, eggs, milk, and a sandwich,” she says.
The Location

Coco’s is located inside Nova Jiu Jitsu, a growing athletic academy for kids and adults in the Greenbrier Valley. Nova offers fitness, self defense, and jiu jitsu classes multiple times a day each weekday.
While the eatery will be available to Nova’s athletes, it’s intended as a community space that is open to the public.
“Nova is a service project as much as it is a business,” she says of the academy owned by Adam DeGraff, Andrew DeGraff, Dan Kuprin, & Rusty Nelson. “This is our next step in offering people something they can’t get here right now, and the owners have been so supportive of Coco’s.”
Customers will be able to order online, via phone, or by stopping inside. They can then eat their food inside Nova or take it to go.
“There’s so much seating in here,” she shares. “There’s built-in entertainment with the jiu jitsu and a kid’s zone. There’s so much room for kids to run around. It’s a family friendly space.”
Abby also plans to offer lunch deliveries in the immediate vicinity around Fairlea to businesses.
“We want to provide a quick, healthier option than going to McDonald’s,” she says.
The Details
Coco’s is located at 8484 Seneca Trail South inside Nova Jiu Jitsu. While they are not open yet, they are coming soon. For hours and menus, stay tuned to RealWV.
“I’m so open to the growth of this place,” Abby concludes. “It could become more, and I look forward to that. It has changed a lot already in the process. The idea is ever-growing.”
