  <title>[recipe]: Gajar Ka Halwa</title>

  <description>Recipe serves 4&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;    2 cups shredded carrots&lt;br /&gt;    2 cups milk&lt;br /&gt;    3 tablespoons unsalted butter&lt;br /&gt;    1/4 cup sugar&lt;br /&gt;    1/2 teaspoon cardamom powder&lt;br /&gt;    6 chopped roasted cashew nuts (To garnish)&lt;br /&gt;&lt;br /&gt;Method:&lt;br /&gt;&lt;br /&gt;    Roast the cashew nuts and set aside for the garnish.&lt;br /&gt;    Boil the milk on medium-high heat in a non-stick pan until it is reduced to about to 1 cup. Stir often to ensure the milk does not burn in the bottom of the pan. Set aside.&lt;br /&gt;    Melt the butter in a frying pan on medium heat.&lt;br /&gt;    Add the shredded carrots and stir-fry for about seven to eight minutes.&lt;br /&gt;    Carrots should be tender and slightly changed in color.&lt;br /&gt;    Add the milk and cook until the milk dries. This will take about eight to ten minutes.&lt;br /&gt;    Next add the sugar, and cardamom powder and stir-fry for another three to four minutes until the halwa starts to leave the side of frying pan.&lt;br /&gt;    Garnish with cashew nuts.&lt;br /&gt;&lt;br /&gt;Tips:&lt;br /&gt;&lt;br /&gt;Gajar Halwa can be refrigerated for up to one week and kept in the freezer for up to two months. When ready to serve just warm.&lt;br /&gt;&lt;br /&gt;Suggestion:&lt;br /&gt;&lt;br /&gt;Cook the halwa a little more and pour on a greased plate. Spread the halwa until it is flat and 3/4 inch thick. After the halwa cools, cut in squares.   <description>Ingredients &lt;br /&gt;(Original recipe makes 4 servings)&lt;br /&gt;&lt;br /&gt;    2 tablespoons cooking oil&lt;br /&gt;    1 large onion, thinly sliced&lt;br /&gt;    4 cloves garlic, minced&lt;br /&gt;    1 teaspoon ground cumin&lt;br /&gt;    1 teaspoon ground coriander&lt;br /&gt;    1/2 teaspoon ground turmeric&lt;br /&gt;    1/2 teaspoon Kashmiri red chili powder&lt;br /&gt;    4 tomatoes, pureed&lt;br /&gt;    1/2 pound paneer, cubed&lt;br /&gt;    1/4 cup water&lt;br /&gt;    1 teaspoon white sugar&lt;br /&gt;    salt to taste&lt;br /&gt;    1/4 cup cream&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;1.    Heat the oil in a large skillet over medium heat. Cook the onion and garlic in the hot oil until the onions are soft and golden brown, about 5 minutes. Sprinkle the cumin, coriander, turmeric, and chili powder over the onion and garlic; continue cooking until the seasonings are fragrant, about 30 seconds.&lt;br /&gt;&lt;br /&gt;2.    Pour the pureed tomatoes into the skillet; cook until the excess liquid evaporates and the oil separates, 3 to 5 minutes. Add the paneer, water, sugar, and salt to the mixture; stir gently so the paneer does not break apart. Cook until the paneer begins to absorb some of the liquid, about 10 minutes. Stir the cream into the mixture and simmer another 5 minutes.   <description>saute onions in some butter and oil for about 5 minutes, then you add a little brown sugar and salt, turn down the heat and let them basically melt for about 10 minutes, then at the very end you add some balsamic vinegar and let that simmer out for just a little bit so the onion mixture thickens, then you put the onions on whatever you want!  I think I might just make a batch of this to keep in the fridge so I can put it on anything I want, because it is sooo good.</description>

  <title>[recipe] green tea cookies</title>

  <description>Makes about 3 dozen&lt;br /&gt;&lt;br /&gt;    1 cup (2 sticks) butter, softened&lt;br /&gt;    2 cups all-purpose flour&lt;br /&gt;    1/2 cup confectioner’s sugar&lt;br /&gt;    1/2 cup granulated sugar&lt;br /&gt;    1 vanilla bean or 1 teaspoon vanilla extract&lt;br /&gt;    3 tablespoons matcha powder&lt;br /&gt;    1/2 teaspoon salt&lt;br /&gt;    1 teaspoon black sesame seeds&lt;br /&gt;&lt;br /&gt;Special equipment – round cookie cutter about 2 inches in diameter, or another cookie cutter about the same size&lt;br /&gt;&lt;br /&gt;    Preheat the oven to 325 degrees F.&lt;br /&gt;    In a large mixing bowl, cream the butter with the confectioners’ sugar and granulated sugar. Add the vanilla extract (if using instead of vanilla bean).&lt;br /&gt;    If you’re using a vanilla bean instead, slit bean down the middle with a pairing knife and scrape out the black seeds from both sides of the middle. Discard the outer shell or save for another use.&lt;br /&gt;    In another bowl, sift together the flour, matcha powder, vanilla bean seeds (if using instead of vanilla extract), and salt. Add the dry ingredients to the sugar butter mixture from step 2. Mix until a smooth dough forms.&lt;br /&gt;    Flour a clean working surface and a rolling pin. Roll out the dough until it is between 1/4″ to 1/3″ thick. Use a 2” wide round cookie cutter to cut out circles. (You may need to reroll the dough once or twice more to use up the remainder.) Place the circles on a baking sheet lined with a Silpat or parchment paper, about 2 inches apart. Sprinkle the black sesame seeds on top of each cookie.&lt;br /&gt;    Bake until the bottoms are just lightly golden, about 8 to 10 minutes, checking at the 8 minute mark. (Be careful not to overbake.)   <description>Prep Time: 15 minutes&lt;br /&gt;Cook Time: 1 hour, 45 minutes&lt;br /&gt;Total Time: 2 hours&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;    1 cup dried chickpeas or 16 oz. can of chickpeas or garbanzo beans.&lt;br /&gt;    1 large onion, chopped*&lt;br /&gt;    2 cloves of garlic, chopped*&lt;br /&gt;    &lt;s&gt;3 tablespoons of fresh parsley, chopped&lt;/s&gt;&lt;br /&gt;    1 teaspoon coriander*&lt;br /&gt;    1 teaspoon cumin*&lt;br /&gt;    2 tablespoons flour*&lt;br /&gt;    Salt&lt;br /&gt;    Pepper&lt;br /&gt;    Oil for frying&lt;br /&gt;    &lt;i&gt;1 egg&lt;/i&gt;&lt;br /&gt;&lt;br /&gt;Preparation:&lt;br /&gt;Place dried chickpeas in a bowl, covering with cold water. Allow to soak overnight. Omit this step if using canned beans.&lt;br /&gt;&lt;br /&gt;&lt;s&gt;Drain chickpeas, and place in pan with fresh water, and bring to a boil. Allow to boil for 5 minutes, then let simmer on low for about an hour. &lt;/s&gt; Cover chickpeas with water and microwave for 5 minutes.&lt;br /&gt;&lt;br /&gt;Drain and allow to cool for 15 minutes.&lt;br /&gt;&lt;br /&gt;Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour. *I eyeballed all of the spices (and omitted the parsley altogether) and probably put more in than the recipe strictly called for. Same for the flour, totally eyeballed that.&lt;br /&gt;&lt;br /&gt;Mash chickpeas, ensuring to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste. Mush with egg. Add more flour or bread crumbs as necessary to make it vaguely the right texture.&lt;br /&gt;&lt;br /&gt;Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.&lt;br /&gt;&lt;br /&gt;Fry in 2 inches of oil at 350 degrees until golden brown (5-7 minutes).&lt;br /&gt;&lt;br /&gt;Serve hot.</description>

  <description>Prep Time 15 minutes&lt;br /&gt;    Total Time 40 minutes&lt;br /&gt;    Yield Serves 4&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;    1 tablespoon unsalted butter&lt;br /&gt;    2 shallots, minced&lt;br /&gt;    2 teaspoons freshly grated ginger&lt;br /&gt;    1 1/2 tablespoons curry powder&lt;br /&gt;    2 Granny Smith apples, peeled, cored, and cut into 1-inch pieces&lt;br /&gt;    1 small russet potato, peeled and cut into 1-inch pieces&lt;br /&gt;    1 teaspoon coarse salt, plus more for seasoning&lt;br /&gt;    3 3/4 cups homemade or low-sodium canned chicken stock&lt;br /&gt;    1/2 cup heavy cream or milk&lt;br /&gt;    Freshly ground pepper&lt;br /&gt;    Sour cream, for garnish&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;    Melt butter in a medium saucepan over medium heat. Add shallots; cook until soft and translucent, about 2 minutes. Add ginger and curry powder; cook, stirring, 1 minute. Add apples, potato, salt, and chicken stock. Bring to a simmer over medium-high heat, and cook until potato is tender when pierced with a paring knife, about 12 minutes. Remove from heat, and let cool slightly.&lt;br /&gt;&lt;br /&gt;    Use an immersion blender, or transfer mixture to the jar of a blender, working in batches if necessary so as not to fill more than halfway; puree just until smooth (do not overprocess). Return soup to pan; stir in cream, and season with salt and pepper. Place over medium heat until soup is just heated through; do not let it boil. Divide soup among serving bowls, and garnish with sour cream.</description>

  <description>it uses leftover rice so it&apos;s super fast, as well as super tasty.&lt;br /&gt;&lt;br /&gt;put about 1/3 a stick of butter in the bottom of a pot with a little bit of chicken or vegetable stock.  melt on medium high heat.&lt;br /&gt;&lt;br /&gt;I&apos;m lazy, so I&apos;m almost always guaranteed to use garlic powder and onion powder instead of actual garlic and onion &lt;i&gt;but&lt;/i&gt; if you wanted to use the real stuff instead, this is when you&apos;d add the onion and garlic (sliced and minced, respectively) to the bottom of your pot. Then cook on medium high to high heat until the garlic and onion is slightly brown/translucent before adding more soup stock and your leftover rice.&lt;br /&gt;&lt;br /&gt;If you&apos;re lazy like me, then just add leftover rice and enough soup stock to completely cover it to the pot. Stir gently so that the butter at the bottom gets evenly distributed. Add spices: a lot of garlic powder (like, 2 tea spoons, maybe; possibly more), and a lot of onion powder (like a tablespoon? more?), more black pepper than you think you need (uhh, a 1/4 to 1/2 of a teaspoon perhaps?) and I also used crumbled dry basil (probably something like 20 leaves). You could use fresh basil too, but you&apos;d want to slice that up, and i think basil is supposed to be more aromatic when it&apos;s fresh, so you maybe wouldn&apos;t need as much. Mix your spices in, and watch the pot with half an eye, in case you need to add more liquid as it simmers. You could add more soup stock, or water, as your prefer. If you add more liquid, you may need to stir this in too so that it&apos;s evenly distributed.&lt;br /&gt;&lt;br /&gt;Meanwhile, slice up whatever stuff you&apos;re adding to your risotto. I&apos;ve done it with red and yellow peppers and with mushrooms, variously, but I think i&apos;ve got a preference for peppers. Someday I may work my way up to adding meat.&lt;br /&gt;&lt;br /&gt;Then, heat butter in a separate pan (so that everything tastes like butter instead of a weird mix of cooking oils). Dump your veggies in the pan along with whatever spices you used in the risotto and panfry while stirring frequently. When they&apos;re mostly done, maybe a bit brown on the edges, dump them into your risotto, and stir everything gently in. Taste, and add additional spices as necessary, and let it simmer for a bit more until your veggies, etc are all the way done (level of crispness up to you!).&lt;a name=&apos;cutid1-end&apos;&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Serve and eat!&lt;br /&gt;&lt;br /&gt;other things:&lt;br /&gt;&amp;hearts; You can also add white wine as part of your liquid if you want. You could also probably add cheese (I&apos;d suggest something like parmesan, which is grated very finely, and easy to incorporate.&lt;br /&gt;&amp;hearts; If you&apos;re really lazy, you could probably cook everything in the bottom of your pot before adding more butter and the rice and liquid. I &lt;i&gt;am&lt;/i&gt; really lazy, but I tend to mess up the timing of things when I cook them all in one pot like this, so I&apos;ve always used a pot and a pan.&lt;br /&gt;&amp;hearts; while i&apos;ve never tried it, I bet you could do this with brown rice too.   <title>[recipe] Hong Kong Egg Waffle</title>

  <description>5 eggs (separated) &lt;br /&gt;3/4 cup milk&lt;br /&gt;1 1/4 cup flour&lt;br /&gt;1 Tb vanilla&lt;br /&gt;3/4 cup sugar&lt;br /&gt;1 1/2 ts baking powder&lt;br /&gt;3/4 stick (6 Tb) butter (melted)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;half sugar added to egg whites -- whip to medium peaks&lt;br /&gt;half sugar added to egg yolks.&lt;br /&gt;add melted butter to yolk+sugar mixture&lt;br /&gt;then add milk and vanilla. mix&lt;br /&gt;add flour and baking powder. mix well, until there are no lumps.&lt;br /&gt;&lt;br /&gt;fold in whipped egg whites in two stages until fully incorporated.&lt;br /&gt;&lt;br /&gt;preheat pans on medium heat. brush with oil (or coat with pam). &lt;br /&gt;&lt;br /&gt;add approx 3/4s of a cup of batter to middle of fancy egg waffle pan, put the two half of the pan together, and flip. cook for 1.5 - 2 min. flip. cook on other side approx same time. &lt;br /&gt;&lt;br /&gt;put waffle on cooling rack approx 1 min to crisp up.&lt;a name=&apos;cutid1-end&apos;&gt;&lt;/a&gt;&lt;a name=&apos;cutid1-end&apos;&gt;&lt;/a&gt;</description>
