Merry Christmas (Eve?) kids! I realize it's not actually Christmas yet, but like many of you I doubt I'll have time to post tomorrow.

I've been at my parents' enjoying free foodstuffs for the last couple of days and will eventually head back to my place on boxing day, as I have to work on Thursday and I should really get some groceries. HAHA, I am so lazy.

Now,

*flings candy canes at everyone*

♥

Lemons' Best Pumpkin Muffins EVER.

So here is the recipe for my famous pumpkin muffins. :p This includes a couple of alterations that I made to the original recipe, which is what makes them particularly awesome. ;) IE: it asks for 2 cups of white sugar, but I like to put in half brown. And I added the nutmeg/ginger, but you can pretty much put whatever spices in that you normally put in a pumpkin pie, is my rationale.

I also don't mix things with an electric beater, I do it all by hand with a spatula. I find it's like cake, the less you beat the batter the richer and fluffier the muffins will turn out. :)

4 eggs
1 cup white sugar
1 cup brown sugar
1 1/2 cups of oil (doesn't matter what kind, just maybe not olive oil)
1 3/4 cups or a small can pure pumpkin (not the pie filling!)
3 cups all purpose flour
1 tbsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. powdered ginger
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 cups raisins*

*The raisins of course are optional, but if you have anyone who will WEEP AT YOU if you give them raisin-less muffins (like my dad), you can always just split the batter. :p

Beat eggs slightly with a fork. Add the sugars, oil, and pumpkin and mix thoroughly.

Combine all the dry ingredients and add to the pumpkin mixture, mixing until smooth. And if you're putting them in, stir in the raisins.

Fill greased muffin cups 2/3 full and sprinkle the tops with brown sugar.

Bake at 375ºF for 15-20 minutes. It depends on your oven, obviously, as well as the muffin tin you're using, but I never leave them for the full 20. You're best bet is to keep an eye on them while they're rising, and once they've finished puffing up give them about 2-3 more minutes so they don't get too dry. You can do the toothpick test to make sure they're not still gooey inside.

In conclusion, BEST MUFFINS EVER. And this recipe makes 2 dozen, sometimes more depending on how much batter to put into each cup. ^_^b
