Stir-Fries and a QUESTION

So, as always, my 2011 goals included adding more healthy habits to our lifestyle, specifically eating more vegetables and exercising through the winter months.

For being six weeks in we're doing surprisingly well. The "Just Dance" programs have proven a God-send on the Wii, as we both like them well enough that we are still exercising five to six times a week since we got them after Christmas.

Working hard on the veggie pledge, too, trying to make sure we have salads or stir-fries several times a week, too. Have to start adding more veggies to my school lunches, but I've been pretty good with dinners.

It's been satisfying and tasty to rediscover stir-fries again. Reminded me how simple they are, too. I microwaved a bag of fresh Chinese vegetables tonight, added some chicken and spicy sauce and put it over some basmati rice (Uncle Ben's- open a bag, two minutes in the microwave, ding! Dinner.).

I'm looking for some more ideas for veggie dishes and stir-fries- the simpler the better. So...

What are your favorite vegetable side dishes to make? How do you make them?

Do you make stir-fries? What are your favorite stir-fry combinations? Veggies? Meat? Sauces?
