Home-made Soup

I made a pot of soup last night. Probably not such a big deal for the culinary-inclined among you, but for me it was a bit more of a departure.



Though I can cook, it's not one of my favorite things to do, and my idea of soup is usually microwaving something out of a can or adding boiling water to a dehydrated package. I honestly can't remember the last time I made soup from scratch. My mother makes a wonderful home-made turkey and rice soup that I can recall making once or twice, but not in a long, long time.

Now that I'm on Weight Watchers I've been making sure my fridge is always well-stocked with a variety of fruit and vegetables and even though I tend to hate chopping vegetables I'm getting more into the habit of doing it again. My WW leader told me last week to step up my veggie in-take, so I've been working to do that. I've heard people talk before about the famous WW vegetable soup, hearty, tasty and zero points for a bowl and since the recipe was right in the first booklet WW gave me I figured it was time to try my soup-making skills again.

I went off to the grocery store and bought all the stuff I needed- carrots, cabbage, onions, garlic, zucchini, green beans, basil, oregano, broth, tomato paste. I must admit I cheated a bit and bought my cabbage in a bag and my garlic in a jar, again to avoid too much boring chopping. Came home to my kitchen and went on a chopping frenzy, anyway. The recipe was simple and quick to make and it smelled really delicious as it simmered. The soup was yummy and John liked it, too. I was only disappointed that the recipe didn't make as much soup as I expected. Next time I make it I think I'll double up on all my ingredients.

Do you or someone in your house like to make home-made soup? What kind of soup do you make the most often? What's in it? Can you recommend a good low-fat soup recipe to me?
