Menu Suggestions

I'm going to post complete evening meal menus I've either already had (albeit a long time ago, for some of these!) or am going to soon, and find satisfying and complete. Hopefully these aren't overly obvious in an official or doctrinaire handed-down-from-the-food-gods sort of way; they're just meals I've either actually had and found to be just right, or am excitedly planning to do this summer. As you can see, I try to be a tad balanced nutrition-wise, but not nearly as much as a proper mom or cookbook author. I'm a little more in the Nigella Lawson mindset, where I'm not ashamed to admit there are nights you sit down on the couch and eat cake for supper, or hunker down in front of the fridge eating cheese, etc., etc. It happens. I try not to be TOO ridiculous though...and not often.

I will try to link to actual specific recipes as much as possible, but lots of these are still from my print cookbooks. I'll get around to posting them slowly but surely, and work on adding links as they appear.

I'm also going to keep adding to this as I go, whenever I have a really good meal or remember one from my past. Eventually if I'm not lazy I may break it down into seasons. We'll see.

Lemon Chicken with Mint
Easy Way Spinach and Ricotta with Pine Nuts
Crusty or toasted whole wheat bread, to sop up the sweet lemon sauce
Edna Lewis' Busy Day Cake

Red Salad made with leftover Lemon Chicken
Butter Popovers smeared with various flavors of PansPantry Jelly

Tapas (Olives, Cheese, etc on crisp-bread) or Tomates Tapenade (also on crisp-bread)
Warm Chickpea and Carrot Salad
Apple Cake

Radicchio and Radish Salad with Pear and Parmesan
Flo Braker's Jam-Filled Butter Cake

Summer Romaine Salad with Lime-Garlic Dressing
Mexican Chicken with Beer Glaze
Sweet Potato Oven Fries

Arugala Salad
Kale and Cheddar Frittata
Port Drunk Pears, fruit pie or compote, or some other roasted or stewed fruit

Sauteed spinach, mushrooms, and almonds
Brown rice in chicken stock, a consistency sort of halfway between pilaf or risotto and straight-up soup
Nigella's Banana Chocolate Cake or Cook's Country Boston Cream Cupcakes
